&lt;p&gt;I can't remember how many times I have scalded myself trying to juggle straining pasta or a stock, while trying to reserve the liquid without the contents inside the pot coming tumbling out. &lt;p&gt;The basic corn tortilla recipe is 2 cups of masa harina (aka, masa flour, corn masa mix, or Nixtamal) and 1-1/2 to 2 cups of warm water. Mix the water and masa together and let the mixture stand for 5 minutes or so. Knead the dough until smooth, adding a little more water if the dough is crumbly or a little more masa harina if it leaves paste on your hands. Divide the dough into 16-18 balls. Then press the dough between the plates of a &lt;a target="_blank" title="Cast Iron Tortilla Press | CHEFS Mix" href="http://www.chefscatalog.com/product/29402-cast-iron-tortilla-press.aspx?sourcecode=DW3SM3237"&gt;tortilla press&lt;/a&gt; lines with wax paper or plastic.&lt;/p&gt;
&lt;p&gt;Why a tortilla press and not a rolling pin? Flour tortillas are elastic, thanks to a good amount of gluten. And while you could use a rolling pin on the corn tortilla, the dough is very soft and it is hard to get it even with a rolling pin. With a tortilla press: place a round ball of dough between layers of wax paper, close the plates, squeeze shut with the handle&amp;mdash;round tortilla ready for the griddle.&lt;/p&gt;

&lt;p&gt;When I was a child, each year our Easter Basket held a sugar egg. Have you ever seen one? They have a little diorama inside the egg, sometimes very elaborate scenes. I treasured those eggs, and a few have survived through the years. &lt;p&gt;These are the foot hills behind the CHEFS offices. Typically we can see Pikes Peak and the effect of wild fire from this past summer. Today, where Pikes peak should be, all I see is grey nothing. &lt;p&gt;A delicious chicken, vegetable and pastry composition.&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;1/2 Recipe for Flaky Pie Pastry &lt;br&gt;1 small roasted chicken, skinned and boned, dice into 1-inch pieces (about 3 cups) &lt;br&gt;3 medium carrots (about 1 cup) cut in 1-inch chunks &lt;br&gt;1 cup frozen pearl onions &lt;br&gt;1 cup frozen peas &lt;br&gt;3 large mushrooms, caps and stems, cut into 1-inch pieces &lt;br&gt;3 Tbs butter, melted 1/4 cup flour &lt;br&gt;1 1/4 cups reserved vegetable broth &lt;br&gt;1 1/4 cups chicken broth &lt;br&gt;1 to 2 Tbs. dry sherry &lt;br&gt;1/2 tsp. dried thyme &lt;br&gt;1/2 tsp. ground sage &lt;br&gt;1/8 tsp. nutmeg &lt;br&gt;Salt and freshly ground pepper, to taste &lt;br&gt;Flaky Pie Pastry &lt;br&gt;3 cups unsifted all-purpose flour &lt;br&gt;4 tsp. sugar &lt;br&gt;1 tsp. salt &lt;br&gt;1/2 tsp. baking powder &lt;br&gt;3/4 cup firm, unsalted butter, cut into 1/2-inch cubes &lt;br&gt;1/2 cup chilled vegetable shortening, cut into small pieces &lt;br&gt;7 to 8 Tbs. ice water, or more as needed&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;strong&gt;Directions:&lt;/strong&gt;&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;For Flaky Pie Pastry :&lt;/em&gt; Place the dry ingredients in the bowl of a food processor fitted with a steel blade. Chill for 15 minutes. Process for 5 seconds to blend. Add half of the butter and shortening. Pulse 4 to 5 times, then process for 4 to 5 seconds. Add the remaining butter and shortening and pulse again 4 to 5 times, then process for 4 to 5 seconds. The mixture should have the texture of coarse meal and still contain some larger pieces of fat. Empty the mixture into a large bowl. Add the ice water, 1 tablespoon at a time, drizzling it around the side of the bowl. Use a kitchen fork to push the mixture toward the center with each addition. With floured hands, press the dough against the side of the bowl forming two balls. All of the crumbs should adhere to the balls and clean the bowl. If not, add some additional water, a few drops at a time. Flatten the balls into two, 4 to 5-inch disks. Dust the disks with flour, then score with side of your hand. Cover with plastic wrap. Chill 1/2 hour or longer before using. Will keep refrigerated for up to 3 days. This recipe makes one double crust 10-inch pie.&lt;br&gt;&lt;br&gt;&lt;em&gt;For Chicken Pot Pie:&lt;/em&gt; Bring 2 cups of water to a boil in 2-quart saucepan. Add 1/2 teaspoon salt, the carrots and onions. Cover the pot and bring to a boil, then simmer on low heat for 5 minutes. Off the heat add the frozen peas and mushrooms. Cover and let stand for 1 minute. Place a colander over a large bowl. Drain vegetables in the colander shaking it briefly. Reserve liquid for sauce. In a medium saucepan melt the butter. Add the flour and whisk quickly to form a roux. Cook on low heat for 4-5 minutes or until the mixture turns a light gold color. Add vegetable and chicken broths all at once and whisk on medium heat until the mixture comes to a boil and is thickened. Add the sherry, thyme, sage, nutmeg, salt and pepper. Simmer for 5 minutes. Preheat the oven to 400 F. Distribute the chicken and vegetables into a 10-inch Pie Plate. Pour sauce over mixture. It should come to 3/4 of the level of the filling. If you do not have enough sauce, add a bit more vegetable broth. Roll pastry into a 13-inch circle. Lay the dough loosely on the top of the pan. Trim edges, leaving 1-inch around. Turn edges under and press against side of the pie pan. Flute or crimp with a fork. Pierce the top 10-12 times with the tines of a fork. Brush the top with ice water and sprinkle with 1/4 teaspoon kosher salt and 1/4 teaspoon dried thyme. Bake in 400 F oven for 35-40 minutes or until the crust is golden brown. Let stand 15 minutes before serving.&lt;/p&gt;

&lt;p&gt;I love a good cream puff. Fresh out of the oven, with the pastry cream still warm&amp;mdash;that&amp;rsquo;s my favorite way to enjoy them.&lt;/p&gt;
&lt;p&gt;Cream Puffs aren&amp;rsquo;t hard to make, they just take a little time and patience. Also, you can make the puffs a couple of days before you need them, and combine them with any filling you like. Traditionally, cream puffs are filled with pastry cream. But choose fresh fruit, whipped cream, or even savory fillings, for variations on the theme. Below you will find both a pastry cream and a chocolate cream filling, as well as the pastry recipe.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Food Holidays&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;A few years ago, I started researching food holidays. It began as simple curiosity after reading an article about some food day celebration. What I found was out of 365 days,&amp;nbsp; only 2 days don&amp;rsquo;t have a food, dish, or ingredient to celebrate. Who knew?&lt;/p&gt;

&lt;p&gt;1/2 cup butter or margarine&lt;/p&gt;
&lt;p&gt;1/4 teaspoon salt&lt;/p&gt;
&lt;p&gt;1 cup flour&lt;/p&gt;
&lt;p&gt;4 large eggs&lt;br&gt;&lt;br&gt;&lt;em&gt;Directions&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;Preheat oven to 400 degrees F. Grease 2 large baking sheets.&lt;/p&gt;
&lt;p&gt;In a medium saucepan, combine water, butter and salt. Bring to a boil then remove from heat. Add flour and, using a wooden spoon, stir vigorously until combined and smooth. Return the mixture to low heat, and stir continually until the mixture pulls away from the side of the pan and forms a ball, about 1 to 2 minutes.&lt;/p&gt;
&lt;p&gt;Remove the mixture from heat. Beat in eggs, one at a time, stirring vigorously until smooth after each addition. Drop batter by scant 1/4 cupfuls about 3 inches apart onto prepared cookie sheet.&lt;/p&gt;
&lt;p&gt;Bake 35 to 40 minutes until puffed and golden Puffs should sound hollow when lightly tapped.&lt;/p&gt;
&lt;p&gt;Let cool completely on wire rack.&lt;/p&gt;
&lt;p&gt;To assemble, with a sharp knife, cut off tops crosswise. Remove any soft dough from inside the pastry. Fill with choice of filling. Replace top. &lt;p&gt;&amp;frac14; cup cornstarch&lt;/p&gt;
&lt;p&gt;&amp;frac12; cup plus 2 tablespoon sugar&lt;/p&gt;
&lt;p&gt;1 large egg&lt;/p&gt;
&lt;p&gt;3 large egg yolks&lt;/p&gt;
&lt;p&gt;Pinch of salt&lt;/p&gt;
&lt;p&gt;4 tablespoon unsalted butter&lt;/p&gt;
&lt;p&gt;2 teaspoon vanilla&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Directions&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;In a large, heat safe, mixing bowl, combine cornstarch and &amp;frac12; cup milk and stir to dissolve. Beat whole egg and yolks into mixture. Set aside.&lt;/p&gt;
&lt;p&gt;Combine remaining milk with sugar and salt in a saucepan and bring to a boil over medium heat. Remove sauce pan from heat. Set aside and cool milk mixture for 5 minutes. Slowly add egg mixture, in a thin stream, into hot milk.&lt;/p&gt;
&lt;p&gt;Return mixture to stove top and stir vigorously until mixture comes to a boil. Continue to stir until pastry cream becomes thick, about 5-7 minutes. Once pastry cream reaches this stage, remove sauce pan from heat and stir in butter and vanilla extract. To prevent over cooking from residual heat, transfer the saucepan to the ice bath. Stir occasionally until pastry cream is cool about 30 minutes.&lt;/p&gt;

&lt;p&gt;1/2 teaspoon vanilla extract&lt;/p&gt;
&lt;p&gt;Stir together sugar, cocoa and cornstarch in medium saucepan; gradually add milk and instant coffee. Cook, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat.&lt;/p&gt;
&lt;p&gt;Gradually stir small amount of hot mixture into egg yolk, blending well; return mixture to pan. Heat just to boiling, stirring constantly.&lt;/p&gt;
&lt;p&gt;Remove from heat; stir in butter and vanilla. Pour into bowl; press plastic wrap onto surface. &lt;p&gt;&lt;img src="http://www.chefscatalog.com/blog/Media/Default/BlogPost/blog/Traditions/christ2.jpg" alt="" align="right" height="197" width="285"&gt;&lt;em&gt;Ever since my Step Dad passed away on Christmas Eve morning in 2004 we have had lasagna for Christmas Eve dinner in honor of him, since he loved it so much. It&amp;rsquo;s not really a Christmas Day tradition but it is one that I make sure to do every year, even if I don&amp;rsquo;t have time for anything else. We also buy all of the children in the family a new ornament each year and my Mom a new nativity scene from a different nationality &amp;ndash;Elizabeth, Customer Care&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;Our family tradition for over 20 years has been taking family, friends and pets (around 20 people) up to the mountains to cut Christmas trees. We always go on the first Saturday of December. Every year, we get up early and head up the hill. Everyone brings coffee, coffee cake, donuts, hot chocolate and an &amp;ldquo;adult beverage,&amp;rdquo; upon occasion. We spend hours looking for that perfect tree, but ultimately we always end up with the same old Charlie Brown tree, but you know what, in the end it&amp;rsquo;s not the product but the adventure and the fellowship. We stand around taking pictures of our wonderful findings; all awhile admiring what we think will look great in our house. After pictures and chit chat we head down the mountain to our favorite restaurant for breakfast. Tired and exhausted we all get home, put up the tree, decorate and take a nap. So it is and has been for more than 20 years.&amp;mdash;Mike, Customer Care&lt;/p&gt;

Then we open our gifts, play with our new toys, take a nap and start cooking -- southern ham with collard greens and sweet potato pie&amp;hellip; oh, and what is a Christmas dinner without more cookies!!! &amp;ndash;Steven, Customer Care&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;When I was younger, my mom and I would go to my aunt and uncle&amp;rsquo;s house on Christmas Eve and do a pot luck dinner, open gifts and watch the movie Christmas Vacation. My Mom would make stir fry, rice, and fried won tongs, and my aunt would make BBQ chicken and a veggie tray. Then on Christmas Day we all would have dinner at my house &amp;ndash; turkey and ham. Now we don&amp;rsquo;t do that anymore; everyone has moved on in life. The past 3 years I have taken my Mom to the Summit at the Broadmoor for Christmas Eve dinner. And when I have time I will watch old Christmas movies with her like White Christmas.&amp;mdash;Jon-Michael, Merchandising&lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;img src="http://www.chefscatalog.com/blog/Media/Default/BlogPost/blog/Traditions/christ1.jpg" alt="" align="right" height="198" width="287"&gt;&lt;/em&gt;&lt;em&gt;One of my favorite holiday traditions is when my Mom and I would make our Christmas cookies using my great-grandma&amp;rsquo;s recipe. They are formally called German Pfeffernusse cookies, but my family just calls them anise oil cookies. We always make them in late November because they have to age for about a month. It takes a whole day: we have to wake up early and make the dough, roll it into small snakes, and then refrigerate the snakes for the whole morning so it is easy to cut into small pieces. The cookies taste just like licorice and honey, and we cut them into small, quarter size pieces and then bake them until they are golden brown. Once cool, we place the POUNDS of cookies in a large flour sack and put the sack in a cool dry room. The cookies then age for a whole month in the flour sack, as the licorice smell slowly invades each room of the house. By the time the cookies are ready, the entire house smells like anise oil! I remember when I was little we always kept the hanging flour sack in the closet attached to my room because it was the darkest and coolest room in the house. And I would sneak into the closet every night to steal the cookies! I would only take a couple at a time to try to be really sneaky, and to this day I don&amp;rsquo;t know if my mom knows that I snuck some. After the cookies age, we would them allocate them out in pretty bags and send them to the entire family. My mom would always note that she thought that we had made more cookies--Clara, Customer Care&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;&lt;img src="http://www.chefscatalog.com/blog/Media/Default/BlogPost/blog/Traditions/christ6.jpg" alt="" align="left" height="205" width="282"&gt;My mother&amp;rsquo;s side of the family has eclectic traditions to say the least, and they host an annual holiday party where the guests include Christians, Jews, Muslims, Hindus, Atheists/Agnostics, Buddhists and sundry other &amp;ndash;isms. As such, my aunt invented a new all-inclusive holiday for the party called &amp;ldquo;Rhinoceros Day.&amp;rdquo; Decorations include an African savannah motif, guests exchange rhinoceros-related gifts, and cream horns are served for dessert. In recent years it has merged with &amp;ldquo;Festivus&amp;rdquo; to include the unadorned aluminum pole, feats of strength and the airing of grievances. &amp;ndash;Tristan, Customer Care&lt;/p&gt;
&lt;p&gt;&lt;em&gt;We keep Santa believable for as long as possible. None of the children saw any of the &amp;rdquo;Santa&amp;rdquo; gifts, not even their siblings. I would use special Santa wrapping paper, very distinct from the other presents, print out To/From tags &amp;ndash; so they wouldn&amp;rsquo;t recognize my handwriting. Presents from Santa didn&amp;rsquo;t come out from hiding until Christmas Eve, after everyone was asleep. They had their doubts one year and decided to test Santa by asking him to fix a special stuffed animal that our new puppy ripped apart. They left all the pieces and stuffing of &amp;ldquo;Bulldoggy&amp;rdquo; on the fireplace with a letter to Santa asking to put him back together. When they saw Bulldoggy Christmas morning, back to his former self, they were believers! My youngest found out Santa wasn&amp;rsquo;t real Christmas morning when she was 14, when her brother opened a present from Santa that she recognized as something I bought at the mall. &lt;p&gt;&lt;em&gt;Each year my children receive a new Christmas ornament to add to the tree. They are always excited to have a new addition to their personal ornament collection.&amp;mdash;Michelle, Customer Care&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;My favorite tradition is on Christmas Eve when we all fill to-go cups with hot chocolate (plus peppermint schnapps for some of us) and load-up in our cars to drive around town looking at the Christmas lights and decorations. It is a nice time to visit with family, take a break from the cooking/wrapping/cleaning duties and, most of all, just enjoy the season and the fact that we have each other to share it with.&amp;mdash;Rosie, Merchandising&lt;/p&gt;
&lt;p&gt;&lt;em&gt;My favorite tradition is decorating the tree. I get to see the ornaments from all stages of my life and remember those who gave them to me. There&amp;rsquo;s Snoopy and Woodstock and my Little Kiddle Santa Claus from childhood. Our &amp;ldquo;First Christmas Together&amp;rdquo; ornaments&amp;mdash;now 35 years old. Ornaments from our parents, our friends and family, from vacations and others&amp;rsquo; travels, too. &lt;p&gt;One Christmas tradition of mine is starting out the day with a slice of my mom&amp;rsquo;s banana bread. Growing up, I had a slice while I sat on the floor anxiously waiting to open Christmas presents. In college, I loved when I came home at the end of the semester and my mom had filled the house with the smell of the baking bread. Now if I&amp;rsquo;m not home for the holidays, I make my own banana bread for my husband and I because it just wouldn&amp;rsquo;t be Christmas morning without it.&amp;mdash;Beth, Merchandising&lt;/p&gt;

I can still pull out pictures from Christmas when I was 2 years old, and at the same time, hear myself going crazy-excited over a Fisher Price kitchen! &lt;p&gt;&lt;em&gt;I first met my in-laws over Christmas, and my mother in-law prepared this fabulous stew Christmas Eve. When I asked what it was, I was told Reindeer Stew. I got the whole story, Rudolph fell off the roof last night and, well, you know how it goes. Turns out those reindeers really had trouble with my in-laws roof and I&amp;rsquo;ve had reindeer stew every Christmas since &amp;ndash; going on 22 years. Now I make it for my children and they enjoy the delicious Reindeer stew (really beef stroganoff) as much as I do.&amp;mdash;Mona, E-Commerce&lt;/em&gt;&lt;/p&gt;
&lt;p&gt;My family goes through the neighborhoods looking at Holiday lights, and we make &amp;ldquo;Christmas Light Awards&amp;rdquo; that we put in mailboxes of our favorite displays. My boys are now 19, 17 and 15 and they still love to make the awards (glitter all over the kitchen table) and deliver them. &lt;p&gt;&lt;em&gt;My family back in Florida they all get together (around 20 people) and cook 3 whole pigs. The men get up at 4:30am and start to cook those whole pigs on 7ft poles. Then around 8am the women start to cook a big feast dinner. My family is Puerto Rican, so anything Spanish they cook. After dinner, my family starts to play Hispanic instruments and sing Spanish Christmas songs, while the kids and teenagers make the dessert&amp;mdash;usually cookies, cupcakes, and cakes. That way ever one in the family gets to do some of the cooking. &lt;p&gt;We have two holiday traditions at our house that I love. One is our Christmas countdown. We have a long string of decorated boxes (think small Chinese take-out style) with the numbers 1-25 on them. Each day of the month, beginning on December 1, my kids get to open a box. They just have simple treats in them or small gifts occasionally. On day 25, there is a poem in the box which is actually a treasure hunt where they eventually discover a larger gift that is one that they share. Last year it was a Wii game that they played all day long. It makes the whole month of December fun and exciting for them, and a small fun moment we share each day. Our second tradition is we get together on Christmas Eve and open gag gifts that we give to each other. It makes for a hilarious evening and gives the kids something they can open before Christmas. This first way is from the links at the top of the page. I apologize for any inconvenience or confusion this may have caused. The email link has been removed from the left-hand side of the page, and our IT group is working to fix the issue. We are hoping to have the link back up soon.&lt;/em&gt;&lt;br&gt;&lt;br&gt;&lt;em&gt;In the meantime, we do publish links to the new posts on Facebook, Twitter, Google +, and Pinterest.
