Rust-Free Stainless-Steel Construction Kershaw Shun scientists developed the ultimate blend of steel VG-10 "super steel." Use and Maintenance

Sharpening Knives with a Steel
To keep your Kershaw Shun cutlery in its finest shape, you will occasionally need to use a sharpening steel. To use your sharpening steel properly, simply rest the steel's tip against a firm surface such as a kitchen counter. Firmly hold the handle up and place the knife blade at a 16° angle near the top of the steel. Start at the blade's base and slide the knife down and across the steel in a sweeping arc motion. Keep gentle light pressure on the knife. Next, repeat this step on the blade's other side. Alternate sharpening both sides of the blade an additional six or seven times. In less than a minute, your knife is restored to precision sharpness.

Cutting with a Professional Grip
Follow the grip technique preferred by professional chefs worldwide. At the back of the blade, firmly grasp your Kershaw knife between your index finger and thumb. Lightly wrap the rest of your fingers around the handle, cradling the weight of the handle in your palm. Holding the knife in this position directly over its balance point gives you greater control of the knife for safe and easy cutting, chopping, and mincing.
