Scanpan Classic
Scanpan Classic is the only cookware that combines long-term nonstick ease with dishwasher-safe convenience and Old World craftsmanship. Using a patented process, each pan is pressure-cast of heavy-duty aluminum with an extra-thick base that heats evenly with no hot spots. The nonstick surface is a compound of ceramic and titanium, super-heated and fired onto the pan. Microscopic craters formed during the firing process are filled with the nonstick compound, so it cannot be scraped off and is metal-utensil safe.
Patented spring-lock handles stay cool, and tempered glass lids make it easy to monitor cooking. Specifically engineered for halogen and ceramic cooktops, Scanpan Classic also delivers excellent results on gas and electric coil stovetops and is oven-safe to 500º F.
Scanpan Professional
Scanpan Professional features clean, elegant lines for the most unique cookware design on the market. The stainless steel covers and handles are polished in a two-tone matt-and-mirror finish, setting an exciting visual contrast to the all-black pan body.
Scanpan Professional uses the patented Scanpan technology well established with Scanpan Classic. The pan body is made from a core of solid, squeeze cast aluminum forged into shape with two hundred tons of pressure. The optimum thickness of the pan prevents warping and keeps the pan base perfectly flat, especially important when used with glass top or ceramic ranges.
Scanpan Professional is perfect for both the serious chef and the occasional cook. The professional pan base distributes heat quickly and evenly while retaining heat longer, thus reducing energy use. Hot spots are completely eliminated. The patented nonstick surface is created by firing a ceramic-titanium compound into the pan at 36,000° F and twice the speed of sound. The ceramic-titanium particles briefly liquefy and permanently anchor themselves in the pan. A specially formulated nonstick compound is then embedded in the ceramic-titanium surface. Scanpan Professional is safe to use with metal utensils and comes with a Manufacturer's Warranty.
Scanpan Professional can be used with little or no fat, making the preparation of low-calorie or fat-free dishes easier. The unique, patented surface technology combined with the professional pan base allows for browning, searing and deglazing, features that are not normally found with nonstick cookware. Scanpan Professional offers perfect food release every time and can easily be cleaned with the wipe of a sponge.
Scanpan Professional 18/10 stainless steel covers are available separately and are interchangeable with all other Scanpan cookware of the same diameter and, of course, within the Scanpan Professional assortment.
The cast, 18/10 stainless handles are securely and permanently attached with heavy-duty, stainless steel rivets that are guaranteed not to loosen. The handle design with the sturdy V-connection keeps the handles cool longer. The large grip area allows for easy control and handling of these professional weight pans.
Scanpan Professional is suitable for all cooktops except induction. It allows for higher-heat applications from stovetop stir-frying to oven roasting up to 500° F.
Scanpan Cookware Use and Maintenance
Before use:
Wash your product in warm soapy water.
During use:
Frying with fat: Heat your product to cooking temperature using medium heat then add the fat.
Frying without fat: Heat your product to cooking temperature using medium heat then start to fry.
After use:
Wash the product with warm soapy water. It is easiest to clean this product while it is still warm. The product must always be completely clean before it is put away.
Do not use oil from aerosol sprays, as this can impair your product's nonstick coating.
Do not overheat the product as the aluminum is superior in retaining heat and high heat is unnecessary. High heat will reduce the nonstick performance. Overheating will not be covered under warranty. You should not use your Scanpan product to store food.
Burn marks due to overheating or charring of fatty substances can be removed by 3/4 filling the product with water and bringing to a slow boil. Using medium heat, add a dessert spoon of dishwashing liquid, simmer for 15 minutes, rinse and scrub. You can then clean the pan in the normal way.
Some signs of wear and tear may become visible on the coating. This is normal and does not affect its nonstick qualities.
Misuse such as knife cuts and use of electrical equipments is not covered under warranty.
Dishwasher-safe, but not recommended. Can withstand oven heat up to 260°C (500°F).

Can I expect to see scratches in the pan when using metal spatulas?
The pan surface over time will look used, including scuff marks from any spatula. This is equally expected and does not interfere with the performance of the pan. We recommend to not actually cut in the pan surface. This would ruin a good knife!
How do I avoid scratches on my glass or ceramic cooktop?
First and foremost - lift the pans before moving them, don't drag them! You should find detailed instructions in the cooktops manual how to maintain that surface.
