Wow!
Having used Wusthoff and Mac knives for years, this is by far the nicest knife I've ever used. I reviewed knives for quite some time before deciding on this Shun and I am blown away. The edge on this knife is second to none. The handle is the most comfortable I've used. Overall, the quality of knife you get for the money is incredible. Shun will be my knife of choice from now on.

beauty and function
I spent quite some time shopping for the best Santoku knife I could find. After checking out the weight and balance of a number of the "better" knife makers, I can say that I believe this knife is in fact "THE BEST" Santoku. It is heavy enough to feel substantial, but light enough & balanced so perfectly that it doesn't add fatigue in long chopping episodes. It has a truly sharp edge that works beautifully on meat, veges and even chocolate. The hollow ground edge helps it release from food, making using it faster and less messy. I've had it for a year, and it's one of the 3 most used knives in my kitchen (the other 2 are a bread knife & a paring knife, which is also shun...).

Slice & Dice
This Christmas gift from my dear wife is absolutely great! Like all Shun knives, it is super sharp, well balanced and the D shaped handle fits well in my hand. This will NOT be re-gifted.

Outstanding knife
I tried a Shun and a variety of other Chef's knives during Culinary training, and in terms of performance, I was sold on the Shun. It's light weight eliminates fatigue during long use. It's toughness holds a VERY sharp edge far longer than any other knives (particularly the top 2 German brands) I've tried.
For the home chef that doesn't want the bother of constantly sharpening their knives this is an excellent choice.

This is by far, my favorite knife. I have a Wustoff set, but this is the one I use most often.

splendid instrument
I was an early adopter of the Santoku knife as a primary kitchen tool; have been using a good-quality Henckels for the past 12 years. It was time to upgrade, as my old knife just wasn't holding an edge, so I researched and settled on this Shun Classic, and I am delighted with it. It is beautiful, well-constructed, superbly balanced, sharp and precise. I especially like the subtle texture and grain of the wood handle. This is absolutely my favorite knife and I believe it will stand up well to the test of time if given the care it deserves (never leave in dishwater--rinse and dry immediately; store it on a knife bar to protect the tip and blade).

Best Santoku
I several Santokus from a number of manufacturers Wustof, Henckels, MAC but this one is overall the best. The weight and edge makes it idea for slicing and dicing. The stiffness of the blade makes smashing a garlic easy. The scalloping insures that potatoes slices are done without sticking. The damascus pattern is impressive but also allows the knife to make horizontal slices of an onion with little resistance. And it's weight is useful when cutting through dense material.

reached for the most often
I used to be a caterer...before I knew about this knife, or perhaps before it was available. Wish I had it then. Love that food does not stick to its sides, cuts through anything with ease and built with the human hand in mind...holds easily and you can use it forever when preparing for large functions without becoming tired...and use it on everything.
