Best ever!
I gave my husband the Shun Chef's Knife for our first anniversary - we love to cook and wanted a "kitchen college education" by upgrading our tools. This knife fits the hand like an old friend, makes every task a pleasure and brings a new level of precision to each dish. We look forward to using it every day!

Amazing
This knife is amazing. It is incredibly sharp and very handsome. Cutting through meat feels like I am cutting through butter. I would recommend this for any kitchen.

Best I've Ever Had
From the start I never felt a knife feel like it was one with my hand. It is super sharp, well balance, and a beauty to look at. I plan on keeping Shun Knives in my college for the rest of my life!!!!

i use this knife every day
buoyed by the endorsements i saw on other websites and from alton brown on his food network show, Good Eats, i ventured into the land of shun. now i have been systematically replacing all my knives (and adding a few others along the way) with shun.
as stated, these knives ship sharp. sharper than anything you have ever seen coming from germany... the steel is hard, which is great for keeping an edge, but if you mis-use the knife (cutting on glass, for instance) the blade will chip more easily than a german blade.
honing is done easily with my F. Dick sharpening steel. (get one. Chef's Catalog shoudl carry this line, but they don't.) i use a commercial sharpener for my german blades, but would never ever put a shun through one of those. when the time comes i will have the knives sharpened professionally... like, every six months.
my first knife was the Alton's Angles 6" utility knife. i liked the room it leaves for my big knuckles under the right-handed handle. (i suppose they make left-handed models, but i have never seen them)
now i have this 8" chef's knife with the hollow-ground blade (despite what critics say, i like the HG on this knife), the U2 "sandwich" knife with the scalloped edge, the carving set, and the 3 inch paring knife.
next up? replace the german 10" chef's knife (no HG on this one) and my journey will be complete. my daughter will get all the german stuff when she gets out of school, luck girl.

Fantastic Knife
This is a wonderful knife: good balance and feel, and extremely sharp. If I could have only one knife, this would be it. I would definitely buy it again.
