Being classically trained in the culinary arts I had a hard time using knife other than my Wusthof 10" chef's knife. I love my santoku. It is light in the hand but still a workhorse. That lightness reduces fatigue. Those cool little dimples allow very thin slicing with no product sticking to the blade. Even my wife [ who is a bit intimidated by big sharp knives] uses our Santoku- frequently enough that I think we might need another. Learn More
