This santuko blade ("santuko" from the Japanese word for "three virtues") does all your chopping, dicing and mincing with a handle set at a smaller 10 degree angle instead of the Shun Classic normal 16 degree angle. The Food Network's Alton Brown worked with Shun to produce this knife that allows both a firm, precise grip and full contact with the cutting board and no scraped knuckles! The natural curve created between the blade and the user's arm makes superior blade control even easier. The VG-10 steel core blade with 16 outer layers of stainless-steel is stain- and rust-resistant with a razor-sharp beveled edge for exceptional cutting performance every time.
