Poorly designed
Viante's CUC-27PM is oversized, loud, and poorly designed. The machine mixed the ingredients quickly and well. The machine jammed continously during extruding. I took the pasta mix from this machine and placed in another extruder and it worked perfectly, verifying that I had the consistency right. In addition to its loud noise and failure to properly extrude, the machine has the extruder at the counter height, making it difficult to get any kind of bowl or your hands under it to remove the pasta. I prefer it higher so I can handle the pasta (especially for linguine, fettucine, spaghetti, etc.).
It is impossible (not difficult -- impossible) to clean. Naturally the mixed ingredients and loose flour will get spilled, but the containers have various openings where loose ingredients can get in, but there is no way to get to the spaces between the plastic to clean them. In addition ingredients get into the slot that holds the plate to open close the mixing chamber to extrusion chamber and there is no way to clean it.
Finally, the machine is a monster. It's twice the footprint of a 6+quart mixer and only has a single function, resulting in lost cabinet or storage space.
My advice. Mix the pasta with a stand mixer and user an extruder such as Kitchen Aid's PTO extruder. It's faster, quieter and easier to clean.

A great tool for home cooking
This is a good product and every cook should have one. Home made pasta is the best. Over the years, I wore out one machine which is why I purchased this one.

Once the consistency of the dough is the correct, the Extruder works fine. However, it is noisy.

Makes what it is intended for butâ¦
If you want to make spaghetti, vermicelli, fettuccini or any flat pasta I really recommend to use the classic pasta rollers/cutter. This machine is OK if you want to make macaroni, penne, rigatoni or any pasta of the âtubeâ type because extruding is the only way to make this kind of pasta.
If you are the kind of person that doesnât read the instructions before using a machine, this pasta maker is definitively not for you. It is not straight forward to disassemble and assembling. To get good results you will need to make several batches until you learn the correct dove consistency.
From the cleaning and sanitizing point of view, this machine has a very poor design. If you need 30 minutes to extrude ½ k. of pasta (1.1 lb.) then you will need 45 minutes to really clean and remove the dove that remained stick to the sharp corners, remove the dove from the holes of the extrusion plate and the extrusion screw housing. There space between the front panel and the mixing hopper is not accessible unless you use a screwdriver. Liquid, flour and dove can reach that area.
Overall this is a nice machine but I will only use it for special occasion when I want to cook fresh tube type pasta.

Great Pasta
Their is a learning curve, Make sure the sliding door is closed before you start and add the water very slow and let it mix before you add more. pasta will come together very fast if you add to much. i messed up the first batch but second batch was great. Nothing like fresh pasta
