Wonderful bamboo utensils! It was time to replace my very old wooden cooking spoons one of which caught fire, so I decided to try bamboo this time, and I am glad I did, this set not only is attractive and easy to use, the price is great , the design fits well in my hands, and I am telling all my friends to go BAMBOO. if you like wooden spoons, you'll LOVE these! I nice heft, beautiful smooth finish, and the flat-edged spatulas are perfect for scraping the bottom of the pan as I stir. These are the best yet. I did not want the olive wood ones, only because the spatula has a rounded edge instead of the straight edge on these. That is a must for me. January 17, 2013

Chef John D. Folse's Grillades
According to Chef Folse, founder and namesake of the John Folse Culinary Institute at Nicholls State University in Thibodaux, Louisiana, it is believed this dish originated when South Louisiana butchers preparing the annual boucherie took thin pieces of fresh pork and pan-fried them with sliced onions. The cooking probably took place in black iron pots hung over the boucherie fires. The grillades were then eaten over grits or rice throughout the day. Today, grillades and grits are a tradition on many Sunday brunch menus. To present it as an entree, serve over rice. Most recipes for grillades call for veal round pounded lightly and smothered in its natural juices. This recipe is from Chef Folse's book The Encyclopedia of Cajun & Creole Cuisine. Makes 6 servings.
