Use and Care
To season your new Emile Henry tarte Tatin, add about 1 inch of milk to cover the bottom of the dish. Let the milk simmer for 5 minutes. Remove the dish from heat and allow it to cool before cleaning. You can also simmer a quart of water with 1/2 cup of rice for 5 minutes instead of the milk.
The Emile Henry Flame Top cookware is suited for gas, electric, ceramic, glass and halogen stove tops and induction heat with an induction disc. The ceramic set is designed for oven, microwave, broiler, grill and open flame to 750 F. Do not heat an empty Emile Henry tarte Tatin. The platter should not be placed directly on a heat source.
Use the Emile Henry Flame Top cookware with all types of utensils, but nonmetal utensils are recommended to better protect the cookware surface.
Always use protective pot holders or oven mitts when handling hot cookware.
When heated, the Emile Henry tarte Tatin expands slightly. This phenomenon creates small, thin cracks in the glaze, which are more visible on light-colored cookware. These small cracks are not a flaw, but are part of the Flame Top cookware resisting temperature change and a sign of the cookware's longevity.
Emile Henry products are easy to clean by hand or dishwasher, but hand washing helps protect the cookware's finish. Burnt-on residue may be removed by pre-soaking the Emile Henry tarte Tatin for about 15 minutes.
The covered Flame Top cookware should be carefully dried and stored with the lid slightly off-center, allowing for air circulation inside the cookware.
