Use and Care
To season your new Emile Henry fondue pot, add about 1 inch of milk to cover the bottom of the dish. Let the milk simmer for 5 minutes. Remove the dish from heat and allow it to cool before cleaning. You can also simmer a quart of water with 1/2 cup of rice for 5 minutes instead of the milk.
When using the actual burner unit that comes with the Flame Top cookware set, use denatured alcohol as the liquid fuel, which is available at hardware stores. Add just enough fuel to soak the fuel receptacle (or wick). Do not overfill. No free flowing fuel should be visible. You may also use small fondue fuel gel packs under the regulator. (Various gel pack distributors are listed on the Internet.)
The ceramic cheese fondue pot alone can be used as a sauce pan with oven, microwave, broiler, grill and open flame to 750 F. Do not heat an empty Emile Henry dish. The Emile Henry Flame Top cookware is suited for gas, electric, ceramic, glass and halogen stove tops and induction heat with an induction disc.
You can use the Emile Henry fondue pot with all types of utensils, but nonmetal utensils are recommended to better protect the cookware surface.
Always use protective pot holders or oven mitts when handling hot cookware.
When heated, the Flame Top cookware expands slightly. This phenomenon creates small, thin cracks in the glaze, which are more visible on light-colored cookware. These small cracks are not a flaw, but are part of the cheese fondue pot resisting temperature change and a sign of the cookware's longevity.
Emile Henry products are easy to clean by hand or dishwasher, but hand washing helps protect the cookware's finish. Burnt-on residue may be removed by pre-soaking the 2.6-qt. Emile Henry fondue pot for about 15 minutes.
Flame Top cookware should be carefully dried and stored with the lid slightly off-center, allowing for air circulation inside the cookware.
