Use and Care
Knife and Kitchen Shears
Wusthof cutlery is dishwasher-safe but hand washing is recommended. In the dishwasher, your Wusthof 8" chef's knife and kitchen shears may bang against other cutlery or pots and pans and knick the blades.
Your kitchen shears come apart for thorough sanitation and easily locks back into place. Wipe the blades of the chef's knife and kitchen shears clean with a wet cloth and dishwashing detergent. Dry immediately.
No metal is completely stain-free. To prevent slight tarnishing, be sure to remove acidic foods (lemon, mustard, ketchup, etc.) from the blades after use. If blades should show some signs of staining, clean with a non-abrasive metal polish.
To prevent irreparable blade damage, it is best to store your chef's knife and kitchen shears in a knife block or in-drawer knife tray.
2-Stage Manual Knife Sharpener
Safe and easy to use, the Wusthof 2-stage knife sharpener requires only a few strokes to keep blades sharp. In the ceramic fine stage, the knife sharpener can be used for serrated and scalloped edges.
Place sharpener on a flat work surface. Hold the sharpener with one hand as indicated and the knife handle with the other. Insert knife blade fully into the slot at a 90-degree angle to the sharpener.
Apply moderate downward pressure on the blade while pulling the knife toward you through the appropriate notch. Repeat this action, always pulling the blade from heel to tip (never back and forth) through either the carbide or the ceramic notch.
Note: The first stage carbide (coarse) sharpens dull edges. The second stage ceramic (fine) provides a polished, razor sharp edge. A reasonably sharp knife may only require this light honing.
Always clean your sharpener after use. Clean with a damp cloth or mild brush, wipe dry. Do not rinse with water.
