Per the manufacturer: The Chef'sChoice Limited Edition Professional Sharpening Station is designed for both types of knives. The first 2 stages sharpen to a 20 degree angle for American and European and the 3rd stage functions not only as a stropping/polishing for the American and European knives, but also functions as the sharpener for the Asian knives. It will maintain the 15 degree angle of the Asian knives.
