Love these springforms
I got multiple sizes to make cheesecakes for my wedding and I love Fat Daddio's springform pans. The bottom extends up from the bottom about half an inch, Thus makes transferring the cheesecake easier. They are solid and very unlike the flimsy ones I find all over the place. The surfaces also help the bottom and sides stay smooth and professional looking. They do not have a nonstick coating so I lined it with parchment paper and had no problems. I'm use you could get away with just greasing the sides, but I just wanted that smooth perfect edge. I still wrapped the bottom with foil when cooking in a water bath, so not sure if they would let in water or not.

Reject
Once I took the pan apart, I could not get it back together again. My husband, who is much stronger than I am, could not get it back together again either. Regretfully, I had to return it even though I was very much in need of a 9" springform pan.

Fat Daddio's Round Springform
This springform pan does not work properly. We have received two of them now and neither works properly. The initial spring release is ok but the telescoping side part does not open further without the use of two hands on it to pull apart to release the pan bottom. Obviously, if there is a cake in it, you could not do this and pull it apart.
