Precisely handcrafted, the Shun Premier Honesuki knife delivers ultimate cutting control for slicing around the bones, joints and flesh of meat, poultry and fish. The 4.5-inch Honesuki is a traditional triangular Japanese boning knife with the stiffness needed for deboning meat and strength to snap through joint cartilage. The Shun proprietary VG-MAX "super steel" core blade with 68 outer layers (34 per side) of stainless steel holds an incredibly sharp edge longer. The hammered tsuchime finish features a hollow ground textured pattern that reduces drag and prevents foods from sticking to the blade. Shun Premier knives are stain and rust resistant with a razor sharp beveled edge for superior cutting performance. The walnut PakkaWood handle is infused with a water resistant resin and contours to comfortably nestle in the hand. The beautiful Shun Premier Honesuki takes at least 100 handcrafted steps to complete and resembles hand-forged knives of ancient Japan.

Shun (pronounced: Shoon) is Japanese for "at the peak of perfection." The preeminent blade manufacturer in Japan since 1908, Shun introduced its exquisitely styled and exceptionally sharp Japanese style knives to American kitchens in 2002.
