This should be your main knife.
I have spent 12 years cooking in two of the top ten money making resturants in the USA. When it was time to buy myself a nice knife for home, this was my knife of choice.
The 8" should be your main utility knife. I have had mine for 5 years and took it with me everywhere I was asked to cook. I have since stocked my parents and sisters house with the same knife to save lugging it around. A sharp knife is safer as less pressure is needed and if you slip more control and shallower cuts are the result. I have yet to have my original knife sharpened. Now thats a quality knife!

All-Around High-Value High-Quality Workhorse Knife
Do I like this knife well enough to recommend it? Well, I've owned my first one for 3-4 years now and love it so much that I just purchased a second one to use in another location. This knife has the heft, continuing sharpness, ease of use to be out on the kitchen counter working a couple of times every day. And after 3-4 years, it looks as though it's brand new. More a man's knife than a woman's, it will slice through meat carving just as easily as chopping an onion ... and everything in between. It's not inexpensive, but for the years of service you'll get, its quality makes the expenditure more than owrthwhile. Every kitchen needs one!

The last chef's knife you'll ever need
Many years back my Mom told me to pick out some good kitchen knives, and she would purchase them for my Christmas gift. We went to a Chef's store, and when I picked up the 10' version of this knife, it was love at first heft. The knife is hefty yet balanced, and does most of the cutting work for you. I regularly prepare large gourmet meals for friends and family (in addition to our own six), and I can whiz through all cutting jobs easily using this knife. From cutting meat and veggies for kebabs, thin-slicing onions, to finely mincing herbs, it does it all. Keeping the blade sharp is a breeze - I use my sharpening steel on it a few strokes every other time I use it, and I've never had to regrind the blade. If I could have only one knife in my drawer, this would be the one I'd keep (and I have a nice set of knives!).

"Love this knife"
I baught a set of Henckels Twin Pro-S knifes for my wife when we re-modled our kitchen a few years ago. We love the knifes but none of them felt just right for me so I baught this knife for me! I love the weight and feel of this knife and it holds a good edge and the edge comes back quickly when needed with just a few strokes on my sharpening stone. My grown son used it the other day while helping prepare a salad and said how much he liked it. Now we know what to get him for his birthday. My wife loves it too but I have to remind her quite often that it is "my" knife! Every kitchen should have one.

Simply the most balanced Chef knife out there
It slices through the toughest vegetables and you don't even have to worry that you cut yourself while doing it. I have mine now for 3 Years and it is so easy to sharpen and it stays sharp for a long time.

Best knife I've ever used!
I have the 8" version, and this knife is superb! It feels very substantial in the hand, and it's heavy enough to actually do much of the chopping work for you - you don't have to forcibly "chop", just guide the knife. The blade is super sharp, holds its edge, and slices very easliy. It does take a little practice to get used to this knife, because it's so sharp - be very careful! I would recommend this knife to anyone who truly loves to cook, and who wishes to make cooking a pleasurable experience!
