excellent purchase
I purchased the whole Wusthoff set and I am extremely pleased and satisfied. This particular knife was easy to clean and extremely sharp. I am a surgeon and this knoife exceeded all my expectations of sharpess and ease of use. The construction is first class, well balanced and comfortable to use. Would recommend this knife highly and without reservation

Just Wow!
I purchased this knife a little over a year ago and it has become my #1 go-to knife. I've used it so much that I think that it has become adjusted to my hand; sort of like an old kitchen 'friend'. I've had several knives over my many years of kitchen experience and this one is definitely the best. I like the balance when I'm slicing, dicing or chopping and am able to make even the thinnest slices to where I don't have to worry with setting up the food processor. The blade has remained sharp in spite of all the usage I've put it through. I make it a point to treat it well and with care and am certain that it will even outlast me. I highly recommend it to anyone considering purchasing a new knife.

This knife is great!
I'm not much of a cook but after trying this knife, I was so impressed, that might change. The Wusthof Gourmet Santoku knife cuts and prepares vegetables so easily I actually bought one for all my friends as Christmas presents. With this knife I can chop, mince, and prepare like a pro. It's comfortable, well balanced, and so sharp it cuts cleanly and perfectly every time. I just have to wash it by hand which is a small price to pay to keep this knife perfect. I also learned from the Wusthof site the proper care of this and all good knives. Now they are stored on magnets, not in a drawer, and hand washed. Every time I replace a knife (or just want another) I buy Wusthof and am slowly getting a full set.

OK knife but not up to the Wusthof Classic
I didn't realize when I ordered this that it wasn't the replacement for my beloved Wusthof Classic Santoku. It's lighter, the kullens (indentations on the blade) are shallower and it just feels less substantial. It's probably a good value for money but I'm returning it (thank you for free returns) and ordering the $10 more expensive Classic.

I have been cooking for over fifty years and have owned and used many knives-this is by far my favorite knife for all slicing, and chopping!! I lov to chop and cook and this knife has added more speed and enjoyment to the process!

It does everything. It definitely is the most used knife in my collection!!
