2 cup fine bulgur
4 cups chopped parsley
2 cup chopped scallions
1 cup chopped fresh mint
1 cup lemon juice
1 teaspoon salt
1 teaspoon pepper
1 cup extra virgin olive oil
1 large ripe tomato, chopped

Cooking Instructions

Wash bulgur well in cold water. Pour bulgur into large mixing bowl and cover with cold water. Refrigerate for approximately 3 hours. After 3 hours, drain the bulgur in very fine strainer. Pour into large mixing bowl and combine with all ingredients. Mix well. Refrigerate for another hour.

Remove from refrigerator and garnish with extra parsley and lemon slices, if desired. Serve cold.
