Cooking Instructions
In a medium mixing bowl, whisk together pancake mix, cinnamon and nutmeg.
In a small mixing bowl, whisk together eggs, milk, butter, lemon juice and lemon zest. Make a well in the center of the dry ingredients. Pour the milk mixture into the dry ingredients. Stir until just combined. Do not over mix. Fold in blueberries. Let stand 5 minutes.
Fill batter dispenser with pancake batter. Dispense batter onto hot griddle. Cook pancakes until bubbles form. Flip pancake over when air bubbles begin to pop.
Makes 12 to16 medium pancakes.
