Apple Apricot Chutney

Apple Apricot Chutney

Ingredients

3 cups coarsely chopped peeled apples
2 cups halved dried apricot, packed
1-1/2 cups white wine vinegar
1/2 cup golden raisin
4 tablespoons fresh ginger, minced
4 cloves garlic, peeled and thinly sliced
1/2 teaspoon salt
1/2 teaspoon hot pepper flakes, or to taste
2 cups white sugar

Cooking Instructions

In a large heavy bottomed saucepan, combine apples, apricots, vinegar, raisins, ginger, garlic, salt and pepper flakes. Stir to combine. Bring to a boil over medium-high heat. Reduce the heat to low, and cover. Simmer for 10 minutes or until raisins and apricots have plumped and softened.

Remove lid. Stir in sugar and return to a simmer. Simmer uncovered for 20 minutes or until sauce has thickened. Remove from heat and let cool to room temperature. Pour the mixture into a pint jar (2-cup), seal with lid, then refrigerated. Makes 2-cups.
