S'mores Truffles

S'mores Truffles


2 tablespoons unsalted butter
1/2 cup heavy cream
12 ounces milk chocolate chips (2 cups)
  24 mini marshmallows
  1-1/2 cups graham crackers crumbs

Cooking Instructions

In a medium saucepan over medium heat, melt butter. Add cream and whisk together and bring to a boil. Remove pan from heat and add chocolate chips. Let sit for 1 to 2 minutes to let chocolate begin to melt. Stir until chocolate is completely melted and smooth. Pour chocolate into a heat-safe bowl, and refrigerate 1 to 2 hours or until chilled through. Once chilled, use a small portion scoop to create the chocolate truffle balls, stuffing a mini-marshmallow into the center of each ball. Place the balls onto a rimmed baking sheet. Continue until all of the chocolate has been used. Place the baking sheet of truffle balls into the refrigerator for 10 to 15 minutes to chill. Remove from refrigerator and roll in graham cracker crumbs. Store in the refrigerator in an air-tight container. Makes 24 truffles.
