Pre-heat oven to 350 F.
Mix wet ingredients: Oil and honey, then add the eggs and juice, and mix again.
Mix together: Carrot and apple pulp, flour, spices, baking soda, coconut, and other optional add-ins.
Combine the wet and dry ingredients together and spoon into paper lined cupcake pan. Makes: 12 to 15 cupcakes.
Top with extra coconut.
Bake for 25 minutes.
