Carrot & Apple Pulp Muffins

Healthy muffins that taste great!

Carrot & Apple Pulp Muffins

Ingredients

2/3 cup vegetable oil
3/4 cup honey
2 eggs
1-1/2 cups carrot and apple pulp (3 medium carrots and 2 small Granny Smith apples)
1-1/2 cups oat flour (gluten free)
1/4 cup apple juice or pineapple
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon sea salt (optional)
1/3 cup shredded coconut sweetened
1/3 cup golden raisins, dried cranberries, dried chopped cherries, or dried blueberries (optional)
1/3 cup chopped walnuts (optional)
Extra coconut or oatmeal for the top (optional, but the coconut toasts as the muffins bake and it looks great and tastes amazing!)

Cooking Instructions

Pre-heat oven to 350 F.

Mix wet ingredients: Oil and honey, then add the eggs and juice, and mix again.

Mix together: Carrot and apple pulp, flour, spices, baking soda, coconut, and other optional add-ins.

Combine the wet and dry ingredients together and spoon into paper lined cupcake pan. Makes: 12 to 15 cupcakes.

Top with extra coconut.

Bake for 25 minutes.
