Gently wash the strawberries and place them in a medium mixing bowl. Sprinkle with the sugar and let stand for 15 minutes.
Working in batches, place the berries in the chopper attachment bowl of a KitchenAid 300 Immersion Blender. Finely chop the berries and transfer them to a large mixing bowl. Add the orange juice, lemon juice, ginger, and zest. Using the blender attachment, blend the mixture until smooth. Cover and chill until ready to serve.
Just before serving, whip the cream. In the chilled bowl of a stand mixer, using the whisk attachment, whip the cream until stiff peaks form. Serve the soup in chilled bowls topped with a dollop of whipped cream.
