Guacamole with fresh tomato


1 ripe avocado, peeled, pitted, and cubed
1 medium to small farm-fresh tomato, chopped
2-3 tablespoons fresh cilantro or 1-2 tablespoons fresh basil, torn
1/4 cup black eyed peas (canned or dry and cooked)
1/4 cup corn (cooked)
1-2 tablespoon olive oil
1-2 teaspoon lime juice
Sea salt to taste

Cooking Instructions

Mix all in a bowl, gentle, and let stand for about 10 minutes to allow flavors to meld.

Serve with homemade tortilla chips or pita wedges or as a vegetarian salad option.
