Preheat oven to 350 F.
IN a small bowl, sift together flour, baking soda and salt. In a large mixing bowl, using a stand mixer or hand mixer, cream together butter and sugars until light and fluffy. Add vanilla, almond extracts, and eggs. Mix thoroughly to combine. With mixer running on low, slowly add dry sifted ingredients into the wet ingredients. Mix until thoroughly combined. Stir in macadamia nuts and white chocolate. Chill dough for 30 minutes.
Using a cookie scoop or teaspoons, divide cookies into walnut sized balls and place onto ungreased cookie sheets. Bake in preheated oven 10 to 12 minutes or until lightly golden brown. Be careful not to overcook. Remove from oven and let cool 3 minutes on the pan, then remove to cooling racks to cool thoroughly. Store in airtight container. Makes approximately 3-1/2 dozen.
