Tomato Herb Sauce with Veggies


1-1/4 cups water
14-1/2 ounces can diced tomatoes
3/4 cup oil packed sun dried tomatoes, drained (about 2.6 ounces)
1-1/2 tablespoons onion, peeled (about 1/2-ounce)
1 clove garlic, peeled
1/2 tablespoon fresh thyme sprigs, leaves only if springs are woody and thick
1 teaspoon fresh oregano leaves
1 teaspoon fresh basil leaves
1/2 teaspoon flax seed
1 tablespoon double concentrated tomato paste

1/2 vegetable bouillon cube
1/2 cup whole milk, room temperature
2-inch piece small zucchini, halved horizontally
2 Roma tomatoes, halved horizontally

Cooking Instructions

Prep time: 20 minutes

Run time: 6 minutes 30 seconds

Yield: 5-1/2 cups

Place water, tomatoes, sun dried tomatoes, onion, garlic, thyme, oregano, basil, flax seed, tomato paste and bouillon into the Vitamix container and secure lid.

Select HOT SOUP program. Switch machine to START and allow machine to complete programmed cycle.

Select Variable 2. Switch machine to START and remove lid plug. Drizzle in milk, then drop in zucchini and tomatoes through the lid plug opening, blending only an additional 5 to 10 seconds so some texture remains. Serve immediately. Recipe and image used with permission and courtesy of Vitamix.

Chef's Notes: In the mood for a meat sauce? Add some cooked crumbled ground sirloin or Italian sausage when serving.
