Squash Millet Pilaf

Squash Millet Pilaf

Ingredients

1/2 tablespoon vegetable oil
1 cup acorn squash
1 medium apple
2 cups millet
1 tablespoon almonds
1 tablespoon Raisins
1 pinch ground allspice
1/4 teaspoon cinnamon
1/8 teaspoon cardamom
1 pinch ground cloves

Cooking Instructions

Cook acorn squash in microwave, about 5 minutes. Let cool and peel and seed. Cube 1 cup. Keep remainder for another use.

Cook millet according to package directions, making enough for 2 cups.

Peel, core, and cube 1 medium tart apple (such as Gala or Breaburn)

In small saucepan, heat vegetable oil. Add in apple and sauté until soft.

Add in squash and millet. Mix and add raisins and spices. Heat through.

Place in serving bowl and garnish with almonds.

Optional: Add garbanzo beans for a vegetarian main dish.

Servings: 4

Yield: 1 cup
