Ajo Blanco (White Garlic Soup)
Cold soup perfect for warm summer night!
Ingredients

firm white bread

water
|
|
2 cups

roasted almonds
|
|
4 cloves
|
garlic
|
|
2/3 cup
|
olive oil
|
|
2 teaspoons
|
sea salt
|
|
2 tablespoons
|
white vinegar
|
|
4 cups
|
cold water
|
|
1/2 pound
|
sweet green seedless grapes, halved
|
Cooking Instructions
Place bread in a medium mixing bowl. Pour enough water over bread to fully soak bread. Squeeze water out. Reserve bread.
Place almonds in large bowl of food processor and pulse to grind fine. Add bread, garlic and 1/2 cup of water. Process until a smooth paste forms, add a few more drops of water if needed. With processor running, slowly add olive oil. Blend in salt and vinegar.
With processor running, add enough remaining water until soup reaches desired consistency. Chill soup for 2 hours. Serve in chilled bowls. Garnish with grapes.
