Preheat oven to 350 F. Generously grease a 9x13-inch baking dish.
In a small bowl whisk together oil, vanilla, and honey. In a large mixing bowl, combine oats, flour, coconut, brown sugar, chocolate chops and salt. Pour oil mixture over oat mixture, and stir until oat mixture is evenly coated.
Press mixture evenly into prepared pan. Bake 25 to 30 minutes or until golden brown and no longer sticky to the touch. Remove from oven and cool in the pan 5 minutes. Using a chef's knife cut into 24 bars while still warm. Store in airtight container.
