Spicy Bacon & Onion Frittata


2 tablespoons oil
  1 medium onion, chopped
1/2 pound bacon, fried until crisp and crumbled
8 large eggs
3 tablespoons whole milk
1/2 cup cheddar cheese, or cheese of choice, grated
2 jalapenos, minced
  salt and pepper to taste
1/4 cup monteray pepper jack cheese, or cheese of choice, grated

Cooking Instructions

Preheat oven to 350 F.

In a large bowl, whisk together eggs, milk, cheddar, salt and pepper. Set aside.

Heat oil over medium heat in a large oven-proof skillet. Add onion and cook until translucent, 3 or 4 minutes. Add eggs and jalapenos into hot pan and stir. Move pan to preheated oven, and bake 15 to 20 minutes until puffed and cooked through. Sprinkle pepper jack cheese across the top and bake an additional 5 to 8 minutes until cheese has melted and is golden brown. Remove from oven. Let rest 5 minutes, serve hot, warm or cold. Makes 4 to 6 servings.
