Preheat oven to 375 F. Use fork to dock, or poke small holes in, bottom of shell. Fill bottom of pie shell with pie weights. Bake for 25 minutes in preheated oven. Remove shell from oven and remove pie weights. Return empty shell to oven for about 5 minutes and bake until lightly golden. Reduce oven temperature to 325 F
In a large mixing bowl, whisk together eggs, milk and cream together with salt and pepper. Fold in grated cheese and pour mixture into shell. Bake in preheated oven 35-45 minutes or until eggs are set and top is golden brown. Let cool 10 minutes before cutting. Serves 6 to 8.
