Chocolate Pizzelles
Perfect complement to ice cream -- chocolate Pizzelle cones!
Ingredients

eggs, room temperature

1 cup

sugar
|
|
1/2 cup
|
butter, melted then cooled
|
|
1 teaspoon

vanilla

baking powder
|

1/4 teaspoon

salt

3 tablespoons

baking cocoa
|
|
16 ounces
|
white chocolate
|
|
1/2 cup
|
colored sprinkles
|
|
1/2 cup
|
nuts, chopped
|
Cooking Instructions
In a medium mixing bowl, beat eggs and sugar. Add butter and vanilla. Sift together flour, baking powder, salt and cocoa and add to egg mixture. Beat batter for 1 minute. Batter will be stiff. Cover bowl and let batter rest for 15 minutes. Drop by spoonfuls onto hot pizzelle maker. Bake as directed by manufacturer. Remove hot pizzelle from baker and roll into cone shape using wooden cone form. Allow cone to cool. Repeat with remaining batter.
Melt chocolate in double boiler. Dip tops of cones in melted chocolate and then quickly dip into sprinkles or nuts. Let cool on waxed paper.
