Spicy Asian Pesto Shrimp & Broccoli Pasta

Green yuzu kosho adds a delightful tartness to this spicey shrimp pasta.

Spicy Asian Pesto Shrimp & Broccoli Pasta


1-1/2 teaspoons fresh ginger, peeled, about 1-inch piece
1 clove whole garlic
1 large stalk fresh lemongrass, pale inner bulb only
1-1/2 tablespoons cilantro, cleaned and stemmed
1/3 cup extra-virgin olive oil
1-1/2 tablespoons green yuzu kosho
8 ounces uncooked thin spaghetti
3 cups broccoli florets
1 pound medium shrimp, peeled and deveined
1 tablespoon butter
2 teaspoons canola oil
10 cloves garlic minced
3/4 cup unsalted chicken stock
  1/4 teaspoon red pepper flakes, or to taste
1 tablespoon water
2 teaspoons cornstarch
1/4 cup parsley, finely chopped
1/4 teaspoon salt
1/4 cup Parmesan cheese, shaved or grated

Cooking Instructions

In a food processor, blender combine ginger, whole garlic clove, lemon grass, and cilantro. Pulse ingredients until finely chopped. Add olive oil and pulse a few more times until it reaches a paste/pesto consistency. Scrape out of food processor into a small bowl. Stir in green yuzu kosho. Set aside. Note: Green Yuzu Koso can be found in Asian markets or gourmet food shops in jar form. Yuzu kosho is a paste made from the zest of the green yuzu fruit and green chilies. It is milder than the red variety. It has a tart flavor, closely resembling grapefruit.

Cook pasta according to pasta directions. Add broccoli last two minutes of cooking time. Scoop out broccoli and place in a medium bowl. Drain pasta and return to pot to keep warm.

To the broccoli add 1 tablespoon of the green yuzu kosho pesto and toss to combine.

In a large skillet over medium heat, add butter and oil. Add garlic and sauté 1 minute. Add shrimp and cook 2 to 3 minutes, each side, until shrimp are cooked through. Remove shrimp from pan. Add chicken stock and red pepper flakes to pan and bring to a boil, scraping pan to loosen any browned bits. Combine 1 tablespoon water and cornstarch in a small bowl. Stir cornstarch mixture into stock mixture and 1 minute. Add broccoli and shrimp, cooked pasta, parsley and salt. Toss to combine. Top with Parmesan cheese. Makes 4 servings.
