Preheat oven to 375 F. Lightly coat a glass 9 x 13 baking dish with cooking spray. Set aside.
Combine cherries and water in a small saucepan and bring to a boil. Remove from heat and stir in oil. Let mixture cool to room temperature.
Stir in sugar and egg.
Sift together flour, salt, soda, cinnamon, nutmeg, and cardamom. Add to cherry mixture and beat until thoroughly blended.
Pour into prepared baking dish and bake for 20 minutes or until toothpick comes out clean.
Cool in pan and cut into 24 bars.
