Preheat oven to 375 F. Spray 16 muffin tins and set aside.
In a medium bowl, blend brown sugar and egg.
In a small bowl, sift together flour, baking powder, cinnamon, baking soda, and salt.
Combine skim milk and canola oil in a measuring cup.
Add to sugar and egg mixture, the dry mixture and the milk and oil mixture, starting and ending with the dry.
Fold in peaches.
Fill muffin tins about 3/4 full and sprinkle with granola or coconut, if using. Bake for 18 minutes or until toothpick comes out clean. Makes about 16 muffins.
