Ball or cut melons into chunks (for a twist on the salad, slice melon into 1/2-inch slices then use small cookie cutters to make shapes). Place melon in a large bowl. Cover, and keep melon chilled until just before serving.
In a small bowl whisk together orange juice, lime juice, mint, ginger, honey and salt.
Just before serving pour orange juice mixture over melon and toss to coat. Serve immediately. Makes 6 to 8 servings.
