Shrimp Tempura

Shrimp Tempura


12 large shrimp, peeled and deveined
1 egg
1 cup all-purpose flour, sifted, plus more for dredging shrimp
1 cup ice water
  salt and pepper, to taste
  vegetable oil for frying

Cooking Instructions

In a deep fryer or deep frying pan, heat oil to 350 F.

Make two or three incisions on the stomach side of the shrimp to straighten them out. Dry the shrimp on paper towels. Season generously with salt and pepper, to taste.

Beat an egg in a medium bowl. Add ice water and stir. Add sifted flour and mix lightly.

Lightly flour shrimp. Use tail to dip shrimp in tempura batter and immediately place in the deep-fryer 3 to 4 minutes or until lightly golden brown and crisp. Immediately remove shrimp from fryer and place on a wire rack to drain excess oil. Serve immediately. Makes 2 to 3 servings.
