Slow Cooked Carolina Pulled Pork
Lazy summer days were made for this easy pulled pork bbq!
Ingredients

One 6 to 8 pound

pork shoulder roast
|
|
1/4 cup
|
Barbeque Rub (any flavor)
|
|
4 slices
|
smoked bacon
|
|
1 jar
|
Barbeque sauce (any flavor)
|
Cooking Instructions
Sprinkle barbeque spice rub liberally over all surfaces of pork roast. Massage into the meat well. Place roast in the insert of a slow cooker and cover well with plastic wrap. Refrigerate overnight.
The next morning, remove plastic wrap and place insert into slow cooker. Lay sliced bacon over roast. Cover and set slow cooker on low. Cook roast for 8 hours.
Remove roast from slow cooker and place on a large platter. Separate the roast into 4 to 5 pieces to cool. When cool, shred the roast using two forks.
In a medium saucepan, warm barbeque sauce. Pour sauce over shredded pork. Serve mounded on plates accompanied by coleslaw and corn bread.
