Spicy Summer Corn Salad
A great addition to a summer barbecue.
Ingredients

1 tablespoon

lime juice

jalapeno, seeded and minced

1 1/2 teaspoons
|
honey
|
|
1/4 teaspoon
|
cumin
|
|
1/4 cup
|
extra virgin olive oil
|
|
4 ears
|
corn, shucked and kernels sliced off
|
|

|
cucumbers, peeled, halved, deseeded and sliced
|
|
1/2
|
vidalia onion, thinly sliced
|
|
|
salt and pepper, to taste

Cooking Instructions
In a blender place the jalapeno, honey and cumin, pulse untill combined. With the blender running, add the olive oil in a steady stream. In a medium bowl, place corn, cucumber and onion. Pour dressing over corn mixture. Toss to combine. Season with salt and pepper. Serve.
