Spicy Summer Corn Salad

A great addition to a summer barbecue.

Spicy Summer Corn Salad


1 tablespoon lime juice
1 jalapeno, seeded and minced
1 1/2 teaspoons honey
1/4 teaspoon cumin
1/4 cup extra virgin olive oil
4 ears corn, shucked and kernels sliced off
2 cucumbers, peeled, halved, deseeded and sliced
1/2 vidalia onion, thinly sliced
  salt and pepper, to taste

Cooking Instructions

In a blender place the jalapeno, honey and cumin, pulse until combined. With the blender running, add the olive oil in a steady stream. In a medium bowl, place corn, cucumber and onion. Pour dressing over corn mixture. Toss to combine. Season with salt and pepper. Serve.
