Black Bean Salsa

A great compliment to grilled fish, burgers and barbecue chicken.

Black Bean Salsa


1/2 onion
1/4 cup fresh cilantro, chopped
1 medium jalapeno, minced
15 ounce can black beans, rinsed and drained
  salt to taste
1 tablespoon lime zest
1 tablespoon lime juice
1/2 teaspoon orange zest
1 orange

Cooking Instructions

In a medium bowl, combine the onion, cilantro, jalapeno, black beans, salt, lime zest, lime juice and orange zest. Supreme* the orange used for zest to remove the pith and add to the onion mixture. Squeeze the juice from the orange into the bowl as well. Mix to blend all the flavors.

*Sections of citrus fruits that are completely devoid of membranes.
