Prickly Pear Jelly
Ingredients

powdered pectin

15 to 30

prickly pears
|
|
3 tablespoons

lemon juice
|
|
3 1/2 cups
|
sugar

1/2 pint jars (1 cup)

Cooking Instructions
Remove the peel and slice the fruit into two or three pieces. Transfer to a large pot and add just enough water to cover the fruit.
Bring to a boil.
Turn the heat down to low and simmer for 20 to 25 minutes.
Do not drain the water and mash the fruit using a potato masher or food processor.
Line a strainer with double-thick cheesecloth.
Add the fruit mixture and strain the juice.
Set aside for a few minutes to allow the sediment to settle.
Measure 2-1/2 cups of juice and add back in to pot.
Add pectin and boil for a couple of minutes.
Add in the lemon juice and sugar.
Stir and boil for 5 more minutes.
Fill jars and seal.
