Remove the peel and slice the fruit into two or three pieces. Transfer to a large pot and add just enough water to cover the fruit.Bring to a boil.Turn the heat down to low and simmer for 20 to 25 minutes.Do not drain the water and mash the fruit using a potato masher or food processor.Line a strainer with double-thick cheesecloth.Add the fruit mixture and strain the juice.Set aside for a few minutes to allow the sediment to settle.Measure 2-1/2 cups of juice and add back in to pot.Add pectin and boil for a couple of minutes.Add in the lemon juice and sugar.Stir and boil for 5 more minutes.Fill jars and seal.
