Pansy and Chicken Green Salad

A colorful, flavorful blend of healthy fruits and veggies!

Pansy and Chicken Green Salad


4-6 cups salad greens, or your favorite lettuce
2 1/2 cups diced chicken (cooked or grilled)
1 cup shredded radicchio
1/2 cup chopped walnuts
3/4 cup edible pansies
1/2 cup fresh blueberries
1/4 cup olive oil
1/4 cup raspberry vinegar
1 teaspoon minced mint
  Salt to taste

Cooking Instructions

Combine oil, vinegar, mint and salt in your favorite dressing cruet; shake well. Refrigerate for 1-2 hours, at least. Combine the rest of the ingredients in a large salad bowl. Before serving, toss dressing and salad. Garnish with more pansies if you like.
