Fava Bean Fettuccine
A tasty sauce that can be paired with many dishes!
Ingredients

3 tablespoons

extra virgin olive oil

2 teaspoons
|
minced garlic
|
|
1 tablespoon
|
finely chopped fresh oregano
|
|
1-1/2 cups
|
chicken stock
|
|
2 cups
|
cooked, peeled fava beans
|
|
3/4 pound
|
dried fettuccine
|
|
|
Parmesan cheese
|
|
|
Salt and freshly ground pepper
|
Cooking Instructions
Heat the olive oil in a medium saucepan. Add garlic and sauté until golden. Stir in oregano, add 1 cup of stock. Bring to a boil, add salt and pepper, and 1-1/2 cups of the fava beans. Simmer 5-10 minutes.
Scrape into a blender and puree with the remaining 1/2 cup stock until smooth. Return the sauce to the pan and add the remaining 1/2 cup fava beans. Season to taste.
Cook pasta al dente. Drain, while keeping about 1/2 cup of the water. Pour pasta into serving bowl and add sauce. Toss well and add pasta water if thinning is necessary. Grate cheese over the top and serve.
