Pumpkin Fava Bean Stew

red bell pepper, seeded and diced

garlic, minced

diced pumpkin

|

cooked fava beans, drained

1 cup

cooked or canned chick peas, drained
|

2 tablespoons
|
fresh parsley
|
|
2 tablespoons
|
chile paste
|
|
1 cup

quinoa or couscous
|
Cooking Instructions
Saute first two ingredients in a water. Add the next two ingredients and cook about 5 minutes. Stir in the remaining ingredients (except quinoa/couscous) and cook for 30 minutes of medium heat until pumpkin is tender. Stir in couscous, cover and let sit for 10 minutes.
