Pumpkin Fava Bean Stew


1 onion diced
1 red bell pepper, seeded and diced
1 tomato, diced
4 cloves garlic, minced
2 cups water
2 cups diced pumpkin
1 cup cooked fava beans, drained
1 cup cooked or canned chick peas, drained
2 tablespoons fresh parsley
2 tablespoons chile paste
1 cup quinoa or couscous

Cooking Instructions

Sauté first two ingredients in water. Add the next two ingredients and cook about 5 minutes.

Stir in the remaining ingredients (except quinoa/couscous) and cook for 30 minutes of medium heat until pumpkin is tender.

Stir in couscous, cover and let sit for 10 minutes.
