Parmesan Soufflé

Parmesan imparts a mild flavor to this traditional soufflé.

Ingredients

4 eggs, separated
5 1/2 ounces parmesan cheese
1 tablespoon unsalted butter
1 1/2 tablespoons flour
1 cup hot water
  white pepper, freshly ground

Cooking Instructions

Preheat oven to 350 F. Butter 4 - 6 1/2 ounce soufflé molds.

In the medium bowl of the Magimix, grate the cheese. Reserve. In a medium saucepan, over low heat, melt the butter. Whisk in flour. Continue whisking until flour is cooked and mixture begins to thicken. Gradually add hot water, whisking constantly. Increase heat to high. Boil for 3 minutes, whisking constantly. Remove from heat. Fold in the grated parmesan. Fold in egg yolks one at a time. Cool.

In large bowl of Magimix, whisk egg whites until stiff peaks form. Do not over whisk. Gentle fold egg whites into cooled mixture. Season with pepper. Divide between prepared ramekins. Bake 15 -18 minutes. Serve immediately.
