Asian Noodle Salad

ground ginger

1/4 teaspoon

salt
|

2 minced

garlic cloves
|
|
1/4 cup

organic or natural peanut butter
|
|
1/4 cup
|
soy sauce
|
|
1 tablespoon
|
rice vinegar
|
|
1 tablespoon
|
fresh lime juice
|
|
1-1/2 teaspoons
|
dark sesame oil
|
|
1 teaspoon
|
hot chili sauce with garlic
|
|
For Salad
|
|
|
1/2 pound
|
uncooked linguine
|
|
1-1/2 cups
|
shredded carrot
|
|
1/4 pound
|
snow peas (frozen or fresh)
|
|
1 cup
|
sliced strips red bell pepper
|
|
3/4 cup
|
sliced or chopped green onions

Cooking Instructions
For Sauce
In a small bowl, combine all sauce ingredients in no particular order. Use a whisk to mix well.
For Salad
Cook linguine using directions on the package. Add carrots and snow peas while still cooking pasta.
Drain in a colander over a pasta bowl while keeping 1/4 cup liquid.
Place pasta mixture, bell pepper, and onions in a large bowl.
Combine sauce and 1/4 cooking liquid.
Pour over pasta mixture; toss well until well combined. Serve warm.
