Chicken Souvlaki with Tzatziki Sauce

For Chicken Souvlaki

1-1/2 pounds
|
chicken breast
|
|
1/4 cup
|
olive oil
|
|
1 lemon
|
juiced
|
|
1 tablespoon
|
oregano
|
|
2 cloves
|
garlic, minced using Wüsthof paring knife
|
|
Salt and Black pepper
|
to taste
|
|
For Tzatziki Sauce
|
|
|
1 cup
|
strained Greek yogurt
|
|
1/2 cup
|
cucumber, finely diced using Wüsthof 7" Santoku
|
|
1/4 teaspoon
|
granulated garlic
|
|
1/2 teaspoon
|
seasoned salt
|
|
Pinch white pepper
|
|
|
1/2 lemon
|
juiced
|
Cooking Instructions
To Make Chicken Souvlaki
Cut chicken into 1 inch pieces using Wüsthof 8" chef knife. In a sealable zip bag add all other ingredients. Add chicken remove air, seal and knead until evenly distributed. Let marinade in refrigerator for 12-20 hours.
Skewer chicken pieces (if using wooden skewers soak in water for 30 minutes prior to skewering)Cook over gas or charcoal grill approximately 8-11 minutes until done.
Serve with Tzatziki sauce.
To Make Tzatziki Sauce
Peel, seed and dice cucumber add to plastic mixing bowl.
Add other ingredients and mix. Cover and store in refrigerator for up to 7 days.
Serving suggestion: Pairs nicely with grilled pita bread and Greek salad.
