Pan Roasted Filet of Beef

Ingredients

7 oz. center cut beef filets (preferably aged, and at room temperature)

4 sprigs
|
fresh thyme
|
|
4 tablespoons
|
unsalted butter (cold and, cut into squares)
|
|
|
kosher salt and freshly ground black pepper
|
|
2 tablespoons
|
blended oil (a canola and extra virgin olive oil blend)
|
Cooking Instructions
Heat oven to 400 F degrees. Heat a large sauté pan on high heat, season filets with salt and pepper on both sides. Add oil to hot pan it should smoke, add filets to pan, and brown nicely on both sides. Remove filets from pan and place on sheet pan. Turn heat off, remove excess oil from pan, and add butter and thyme. Note the thyme will crackle a little, this is good. Once the butter melts, and browns, spoon over the filets, placing a sprig of thyme on top of each. Put sauté pan with filets in oven and cook for about 10 minutes or until instant read thermometer shows 125 degrees. Remove from oven and let rest for 10 minutes before serving.
Note: This recipe is a great tool for roasting any meat, chop, or even fish. You will just need to adjust your cooking times based on what protein you are cooking.
