Apple Bread Pudding with Vanilla Sauce


For Pudding:
4 cups soft bread cubes
1/4 cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1-3/4 cups milk
1/4 cup unsalted butter
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
2 large eggs, beaten
For Vanilla Sauce:
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup milk
1/2 cup unsalted butter
1 teaspoon vanilla extract

Cooking Instructions

To Make Pudding
Preheat oven to 350 F. Liberally butter a 2-1/2 quart baking dish.

In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine brown sugar, cups milk, and butter. Over medium heat, stir until butter is melted. Pour over bread mixture in bowl and toss to combine, pour into prepared baking dish.

In a small bowl, beat eggs, and add cinnamon, and 1/2 teaspoon vanilla. Stir to combine. Pour egg mixture over bread.

Bake in preheated oven 40 to 50 minutes, or until just center is set and apples are tender.

To Make Vanilla Sauce
In a medium saucepan, combine 1/4 cup of sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup butter. Heat over medium heat until boiling. Remove from heat and stir in 1 teaspoon vanilla. Serve over warm bread pudding.
