2 tablespoons olive oil
1-1/2 pounds lean ground beef
1 medium onion, chopped
1 red bell pepper, chopped
4 cloves garlic, minced
6 ounce tomato paste

1 cup beef stock
1-1/2 tablespoon chili powder
1 teaspoon paprika
1-1/2 teaspoon ground cumin
2 teaspoons distilled white vinegar
3 tablespoons brown sugar
2 teaspoon dried oregano
1/4 teaspoon cayenne pepper, or to taste
1/2 teaspoon salt
1/2 teaspoon ground black pepper
8 hamburger buns, split and toasted

Cooking Instructions

In a large skillet over medium-high heat oil. Sauté the onion and red bell pepper until onions turns translucent. Add garlic and cook for 1 to 2 minutes. Add ground beef and sauté until browned, about 5 to 7 minutes. Drain any excess fat.

Add tomato paste, stirring to combine. Cook for 2-3 minutes to remove raw tomato flavor. Add in stock, chili powder, paprika, cumin, vinegar, brown sugar, oregano, cayenne, salt and pepper, and stir to combine. Simmer uncovered 5 to 10 minutes, or until mixture reaches desired thickness. Serve on toasted hamburger buns.
